Intrinsic Chardonnay

Eastern Peake Intrinsic Chardonnay is a blend of P58 and I10V5 Chardonnay fruit. It is grown on a rugged granite outcrop of Mount Bolton in the Ballarat Highlands.
The grapes are handpicked, whole bunch pressed, and transferred to seasoned oak barrels. Fermentation occurs naturally, with no additions. Natural malolactic fermentation follows.
The wine matures for 12 months in casks, then is racked to stainless steel for a further six months. There is no fining or filtering, just a small sulphur addition prior to bottling.
Straw green, Eastern Peake Intrinsic Chardonnay has nutty, toasty complexity with creamy texture and a dry finish. Cellaring potential is five years.
